Ever wondered how Leigh Hinton got to be such a good rugby player? His kicking ability? His safety under the high ball? His surprising pace? It's difficult to be sure, but some say it's down to the nurture from his dear Mum. Growing up on a diet of these delicious welsh delicacies seems to have had a positive effect!
Mrs. Hinton's Welsh Cakes
1lb self raising flour
8ozs margarine (hard sort cut up)
6ozs sugar
3ozs currants or sultanas
2 eggs
a little milk
Pinch of salt

Sieve the flour & salt into a mixing bowl. Add margarine and rub in to resemble bread crumbs. Add the sugar and fruit and stir in with the beaten eggs and milk. Mix to a stiff dough. Place on a floured surface, knead lightly and rollout to 1/4inch thick. Use a cutter or the rim of a glass to cut into circles. Cook on a preheated, lightly greased, flat griddle on a low heat until golden brown on both sides. Cool on a wire rack and serve warm. (spread with butter or without)

You'll get me into trouble Mark. Glad everyone enjoyed the WC's though and helps me keep my weight down by giving them to you lot.

Hey folks, I am not the author of the above article. I've only just noticed it was attributed to me.I do not make negative or positive comments about named players; they read the board.By the way he never gets to see the Welsh cakes , some greedy b.....s eat them!!

The wife (who is Welsh) makes them for St David's day. She adds something else not on the list above, cinnamon I think?
