This is my interpretation of the pecking order and squad balance for each team in pictorial form and inevitably will be full of errors as I relied on wiki, and my knowledge of other teams squad.
I generally won't know whether Prop XXX is tight or loose head; etc; or picking between 3rd and 4th choice, so I'm open to any corrections and hopefully it'll get a bit more accurate over time. Please feel free to suggest any amendments.

Firstly, great effort WT. It is a valuable resource. re Sarrries:
Lamositele is mainly TH (3rd) these days though he can play LH.
Thompson-Stringer and Adams Hale are LH
Walker (disappeared in second post) is now Senior Squad and 4th TH
Koch is 1st choice TH (impo)
It is Kpoku not Kopku, despite what our site writes
A fit Taylor is first choice OC, Brad our only real 12!
In the back row, Clark now 1st OS (imo). Earl, Reffell and Christie are also OS (imo despite our site), Conlon BS. Wray is 2nd choice BS (and also 2nd 8), Vailanu 3rd (2nd as Wray is BS) choice 8
Gallagher ahead of Crossdale at FB (who is more a wing despite what our site states)
SS is 41, Academy (intake not yet announced - hopefully to include a second Kpoku) currently 10

Ewels vs Charteris for me is a close call, at opposite ends of their careers; Luke is on the downhill slope, and Charlie on the uphill. On his day, Luke was still the superior player last season; but "on his day" is likely to be ever less frequent (though he's still a good line-out and maul operator even on a bad day) - and we haven't really seen the best of him at Bath; so you're probably right.
FTR I have pretty severe doubts that we were actually looking to farm him out on loan for this season - that would have taken us down to 4, possibly 3 locks; and he always looked an odd one out in the list of names alongside Allinson, GMercer, JWilson where we have much more cover, and those players are much further away from meaningful gametime.
I absolutely agree with Obano over Paz; and would have him seriously challenging Catt were both fit and in form at the same time. However, his injury pushes him to the back of the queue for the coming season.
On Fotuali'i - based on 2017 - absolutely ahead of Cook; based on 2018 so far; I'd have Cook ahead. It depends on whether Kahn was overplayed and knackered; or if his legs and brain have simply gone. If we can get the Kahn of 2016 back, he'll be first choice ahead of Chudley.
